Chocolate Chiffon Cake (Ollie Fowler)


¾ cup sifted flour

¼ cup plus 2 tbsp boiling water

¼ cup cocoa

¾ cup plus 2 tbsp sugar

2 tsp baking powder

½ tsp salt

¼ cup salad oil

4 eggs (separate - beat whites)

¼ tsp cream of tartar


Mix cocoa with boiling water and cool. Beat egg whites and ¼ tsp cream of tartar. Mix dry ingredients, salad oil, egg yolks. Fold in beaten egg whites. Place in angel food tin.

Bake at 375F, for 10 minutes, then 350F, for 40 minutes.
