Chocolate Chip Meringue Cookies


½ cup (4) egg whites at room temperature

¼ tsp salt

½ tsp cider vinegar

1 cup granulated sugar

2 tbsp orange liquor

1 cup semi sweet chocolate chips

1 tbsp confectioners sugar


In a large bowl, beat whites with salt till frothy. Add vinegar. Beat till soft peaks form. Beat in sugar a little at a time, until stiff and glossy. Beat in liquor, fold in chocolate chips. Spoon level tbsp 2” apart on baking sheets lined with foil, shiny side down. Sift icing sugar lightly over meringues. Bake till lightly coloured and firm to touch. Cool on racks and store in air tight container.


Bake at 275F, for 35-45 minutes


Makes about 45 cookies
