5 tbsp olive oil
6 large tomatoes, cored and sliced thickly
¼ cup chopped basil
1/3 cup capers
¼ cup bread crumbs
Use 1 tbsp oil to coat a shallow baking dish. Place half of tomatoes in dish, sprinkle with half of the capers, the basil and drizzle 2 tbsp oil, salt and pepper. Place remaining tomatoes in dish, sprinkle capers on top with bread crumbs, salt and pepper. Drizzle with remaining 2 tbsp oil.
Bake at 450F, for 20 minutes
Serve chilled or at room temperature
