2 onions thinly sliced
4 potatoes
1 tbsp corn oil
1 cup hot chicken broth
parsley, salt, pepper
Heat oil and when hot, cook onion for 3 minutes, stirring occasionally. Add potatoes, season and cook for 1 minute. Put into a casserole dish, cover with tinfoil. Remove and sprinkle with parsley
Cook 40 minutes
