Angel-food Cake

12 egg whites

1 cup sifted cake flour

¾ cup sugar

1 tsp cream of tartar

½ tsp salt

1 ½ tsp vanilla

½ tsp lemon juice

Sift together dry ingredients. Beat egg whites on low speed till frothy. Mix then at a medium speed till shiny, add flour mix 3 tbsp at a time. Add rest of ingredients. Bake in 10" cake pan with removable bottom. When cooked, press to test, the cake should spring back.

Bake at 325F, for 50 minutes
