Apple Dessert


Crust:

½ cup sugar

½ cup butter, melted and let cool

1 egg

1 tsp vanilla

¼ tsp salt

1 ½ cup flour

1 ½ tsp baking powder


Filling:

7 to 9 cups sliced apples (peeled)

juice of ½ lemon, sprinkled on apples

¼ cup sugar


Sauce:

3 tbsp melted butter

1 cup sugar

2 large eggs

1 tbsp rum

1 tsp vanilla

½ tsp cinnamon


Topping:

Confectionaries sugar for dusting


Preheat oven to 350F. Mix crust ingredients, dough should be soft but stiff - cover dough - chill for 10-15 minutes. Toss apples with lemon and sugar. Brush bottom and sides of 10” spring pan with melted butter. Pat the dough 1/8 to ¼ inch thick, fill with apples. Press gently and cover with foil.


Bake for 1 to 1 ¼ hours. Remove foil after 15 minutes.


Combine ingredients for sauce, pour over cake and cook for 20 more minutes. When cool refrigerate for a minimum of 6 hours.


Dust before serving with sugar.
