Battered Fried Shrimp


1 ¼ lb. large shrimp

salt and pepper

2/3 cup flour

2 tbsp cornstarch

½ tsp baking powder

¼ tsp salt

½ cup ice water

2 tsp corn oil

6 cups corn oil for frying


Butterfly shrimp but leave tails on. Sprinkle with salt and pepper in a bowl.

Mix dry ingredients, pour in ice water.
Mix till smooth, then stir in 2 tsp oil, mixture should be like pancake mix, add a little more ice water if needed.

Heat oil in heavy pot, a cube of bread should be golden in 15 seconds.
Dip shrimp one at a time with tongs into batter.
Cook 3 or 4 at a time, for 30 seconds on each side. Place on paper towels, shrimps should be golden and puffed.
