Blueberry Buckle


Base:

¼ cup butter

½ cup sugar

1 egg

pinch of salt

1 cup flour

1 ½ tsp baking powder

1/3 cup milk

¼ tsp vanilla


Crumb mix:

1/3 to ½ cup sugar

1/3 cup flour

½ tsp cinnamon

¼ cup butter

Cut butter into flour, then include sugar and cinnamon.


Use Cuisinart to cream butter and ¼ cup of sugar. Add egg and remaining sugar, beating until sugar is blended. Sift together flour, baking powder and salt. Alternately add flour mix, milk and vanilla to Cuisinart. Spread into 8"x8" pan.

Spread with 2 cups blueberries, then sprinkle with crumb mix. Bake and serve with ice-cream.


Bake at 350F, for approximately 30 minutes
