Candied Orange Peel

peel of 4 large oranges

¼ cup water
½ cup sugar

Bring cold water to a boil, put in peel strips and boil for 1 minute. Drain and repeat 3 times. Make syrup by reducing water and sugar. Add fruit - stir till syrup is absorbed. Cool and arrange on cookie sheet. Roll in sugar and let dry.
