Chocolate Roll


Jelly roll pan lined with parchment


Sift together:

6 tbsp cocoa

¾ tsp baking powder

6 tbsp cake flour

¼ tsp salt

¾ cup sugar

4 egg whites, stiffly beaten

4 egg yolks well beaten


Add sugar gradually to beaten whites, add yolks. Add dry ingredients.


Bake at 400 in preheated oven for 13 minutes


Place on cookie sheet lined with wax paper or dish towel. Roll up. When cool, spread chocolate cream or whipped cream. Roll up and ice with chocolate cream.


Chocolate cream:

3 tbsp butter

2 squares chocolate

1 cup icing sugar

1 egg

4 tbsp milk


In a bowl of ice place a smaller bowl. Melt chocolate and butter together. Put sugar, egg and milt in bowl - stir till yolk is slightly mixed. Add chocolate, mix. Beat until whipped cream holds it shape.
