Short Crust Pastry

1 cup flour

1 tbsp sugar

¼ tsp grated lemon peel

½ cup unsalted butter (not too cold)

1 tbsp water

½ tsp vanilla

Mix flour, sugar and lemon. Cut butter into ½ inch slices. Mix with hands or pastry blender till like corn meal. Add mixed water and vanilla, working into mixture till just blended. Gather into a ball, wrap in plastic, rest for ½ hour. Then freeze or use. Press into a 9” pie plate (not a black pan). Place in freezer for ½ hour or overnight, well wrapped.

Bake at 375F, for 25 minutes
