Spinach and Potato Pie

2 ½ lb. potatoes

3 tbsp butter

½ cup milk

salt and pepper

2 eggs, lightly beaten

1 cup parmesan cheese

1 ½ lb. spinach

½ tsp nutmeg

2 tbsp olive oil

Boil potatoes in their skins - drain - cool - peel. Mash with a fork, add milk, butter, salt and pepper, eggs, 6 tbsp cheese. Beat till well blended. Cook spinach, squeeze out liquid and add nutmeg. Grease 9 ½ x 12 inch dish with 1 tbsp of oil. Press with spatula half of the potatoes, place spinach on top, then top with remaining potatoes. Sprinkle with cheese and oil.

Bake at 425, for 50 minutes
