Strawberry Mousse


2 cups sliced strawberries

¾ cup sugar

2 egg yolk

1 package gelatine

1 cup milk

¼ cup orange juice (fresh)

1 tsp vanilla

1 cup whipping cream

1/3 cup raspberry jelly


Place milk in saucepan (dissolve gelatine sprinkled over milk - let stand for 2 minutes) over medium heat. Bring milk to a bubbly boil around edges, stirring constantly. Do NOT boil. Pour hot mix into egg and sugar mix, whisking constantly. Return mix to pot. Cook about 2 minutes, continually whisking till custard thickens. Do NOT boil. Stir in orange juice and vanilla. Transfer to a large bowl. Stir in pureed strawberries. Refrigerate, stir occasionally. Beat cream till stiff peaks form, fold cream into strawberry mix - put into glasses or dishes and let set for at least 3 hours. Melt jelly, add some sliced strawberries. Serve with a dollop of whipped cream.


Can be made 8 hours ahead
