Sweet and Sour Onions


8 cups pearl or small onions

3 strips orange rind (or 1 tbsp zest)

1 bay leaf (remove before serving)

1 cup raisins

2 tbsp olive oil

2 tbsp red wine vinegar

2 tbsp tomato paste

½ tsp salt

¼ tsp pepper

1 clove garlic, slivered


Cover onions with boiling water, let stand for 30 seconds - peel, cut shallow cross in root end. In 13x9 dish combine onions, find bay leaf. Bring to boil, 1 cup water, raisins, oil, vinegar, tomato paste, salt and pepper and garlic. Pour over onions. Cover and bake, basting about every 30 minutes till onions are tender and sauce is thickened.


Bake at 325F, for approximately 2 hours

Serves 8
